Delicious bites packed with cheese and spinach

Spinach & gouda cheese muffins

A savory combination of spinach and grated cheese makes these muffins perfect for a family brunch or kids afternoon snack! The spinach flavor mellows as the muffins cool.

Spinach & gouda cheese muffins

2.5 oz Frico Gouda cheese

1.5 oz Frico Old Dutch Master cheese

5.2 oz baby spinach

1 cup milk

2.3 oz olive oil

3 large eggs

3 cups flour

2 teaspoons baking powder

5 oz sour cream

1 handful pumpkin seeds

Pre-heat the oven to 360°F.

Finely chop the spinach, set aside.

Grate the Gouda and Old Dutch Master and set aside also.

Pour the milk and olive oil and crack in the eggs, whisk together. Add it to the flour, baking powder, old Dutch Master, gouda, spinach and a tiny pinch of salt.

Line your muffin trays with paper cases and half fill with the batter, add the sour cream on top, then spoon on the remaining batter, making sure the sour cream is covered.

Sprinkle with pumpkin seeds and bake for 20 minutes or until golden brown.
