Bresaola & arugula cheese fingers
This recipe is part of the appetizers (cold snack category) using Frico’s Red Edam.
7 oz Frico Edam cheese (wedge) (cut into 2.75 inch- fingers)
5.3 oz bresaola
1 bunch arugula (with large flat leaves)
2 tablespoons balsamic glaze/ reduction (OR balsamic vinegar)
1/2 handful pickled cucumber (sliced OR cornichon for garnish)
Place a slice of bresaola on a clean surface, then add a leaf of arugula on top. Place a cheese finger towards the lower edge to allow you to fold the dried beef and arugula around it and continue rolling. You may hold it with a toothpick. Repeat until all fingers are wrapped.
Arrange the fingers in a serving dish. Drizzle balsamic glaze and sprinkle some chopped pickled cucumbers or walnuts. Serve at party or brunch.
