I COME FROM A LONG TRADITION OF CHEESEMAKERS. MY FATHER WAS A CHEESEMAKER, MY GRANDFATHER, AND HIS FATHER BEFORE HIM. EVERY CLASSIC DUTCH CHEESE, LIKE EDAM, GOUDA, MAASDAM IS NAMED AFTER OLD DUTCH TOWNS, WHERE THEY HAVE BEEN SOLD FOR CENTURIES. CHEESEMAKING HAS BEEN A DUTCH AFFAIR FOR MORE THAN 2,000 YEARS, THERE’S NO WONDER WHY WE ARE SO GOOD AT IT. AND FRICO CHEESE IS LIVING PROOF.

Quality has never been negotiable with Frico. There’s quality everywhere, in every aspect of production. It all starts with… the grass. Frico is proudly made in Holland, a country full of green pastures throughout the year, with lots of fresh grass for cows to graze on. And then there’s the cows. Our Friesian cows are our special iconic breed that makes top quality milk, full of taste and nutrients. Our farmers look after their cows like they are members of their own family, making sure they are always healthy and happy.

Our cheese is crafted by experienced cheesemakers to give it its unique character, be it soft, hard, mild, or strong. It’s the authentic Dutch craftsmanship in taste and quality that has made Frico cheeses so loved in more than 90 countries in the world. Our highly nutritious cheeses are delicious, ideal for all the family to enjoy any time of the day!

The top of every Frico cheese carries a unique mark. This tells us what type of cheese it is, its fat content, the country of origin, where it was produced and its serial number. It’s also a mark of quality and proof that the cheese complies with the Dutch Dairy legislation. This passion for quality is what makes Frico cheeses so exceptional in taste: a fact acknowledged in many global cheese competitions in which Frico has been repeatedly awarded.

CRAFTSMANSHIP

We still make cheese from today’s fresh milk just like we did centuries ago, using the same principles that have been our age-old tradition. Frico cheese is naturally matured, giving us different textures and flavors, all characteristic of the finest Dutch cheeses you can find.

To make the cheese you enjoy on your table every day, we take the best milk from farms.

Then we check that the milk meets our health standards and we pasteurize it to destroy any harmful bacteria. After pasteurization, we add starter culture (microbiological culture) to the milk, which is essential for the ripening, and the shelf life of the cheese. Rennet, an enzyme, is also added to the milk to help it thicken and solidify, a process that makes milk curdle into a solid mass. Then we separate the fluid part (whey) from the thick part (curd), using knives rotating at different speeds. When the whey is drained off, the curd is transported to the cheese moulds where they are pressed into the appropriate shape (rectangle, wheel, ball, loaf) depending on the type of cheese, for approximately one hour.

To preserve the cheese, we place it in a brine solution up to two days, until the correct salt content has been reached. Then a thin plastic layer is added to the cheese, to prevent it from dehydrating or forming mould. It’s the ripening that follows that gives Frico cheeses their distinctive taste and flavor. During ripening that can take anything from four weeks to a year, the cheeses are placed on special wooden shelves that absorb moisture and are regularly turned to make sure they keep their shape.

Some of our cheeses have aged for many months or even years to lose most of their moisture, that makes them ideal for grating, gratin dishes, sauces, or salad dressings. Because their taste is so deliciously intense, they are perfect to enjoy on their own, with crackers, grapes or black olives.

The versatility and adaptability of cheese is really amazing, matched only by its incredible health benefits.

Cheese is packed with Calcium, bursting with vitamin D that is necessary to absorb calcium and it also contains folic acid, zinc, phosphorus, and Vitamins A, B2, B12, and K2, a combination that is good for protecting your bones, brain, heart and your immune system. A slice of Frico cheese also provides us with linoleic acid, a proven anti-cancer agent and metabolism booster. Cheese is also rich in phosphorus for strong bones and teeth, as well as selenium that help us maintain healthy hair and nails.

Cheese is a valuable source of complete protein since it contains the right proportions of essential amino acids to allow our bodies to absorb all that goodness. It also keeps our energy levels high, thanks to a balanced combination of fat-energy content.

To make 1 kg of Frico cheese, we need 10 litres of milk. This is because cheese is concentrated fat, calcium, protein, vitamins and minerals found in the milk.
